Simple Greek Salad with Seedy Dressing

Greek salad Recipe

Ingredients
- 2 little gem lettuces, leaves separated
- 1 small radicchio, roughly torn
- 150g medium tomatoes, quartered
- 1 handful pitted mixed olives (black & kalamata)
- 80g feta cheese, crumbled
- Handful fresh dill
- For the seedy dressing: 3 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- Juice of ½ lemon
- 1 tsp honey
- 1–2 tbsp SUCSEED Immunity blend
- Pinch of sea salt & black pepper
Method
Make the dressing
- In a small jar or bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, lemon juice and honey until emulsified.
- Stir through the SUCSEED Immunity blend and season with salt and pepper.
Prepare the salad
- Arrange the little gem and radicchio leaves in a large bowl or on plates.
- Scatter over the tomatoes, olives and crumbled feta.
Dress and finish
- Drizzle generously with the seedy dressing.
