Strawberry, Spinach & Feta Summer Salad
This refreshing summer salad is bursting with flavour and colour. Juicy strawberries, creamy feta, and crunchy walnuts pair beautifully with a drizzle of balsamic dressing and a sprinkle of your favourite SUCSEED blend for added texture and nutritional goodness.
Strawberry, Spinach & Feta Summer Salad recipe
Serves 2
Ingredients:Â
- 100g baby spinach leaves
- 6–8 ripe strawberries (hulled and sliced)
- 50g feta cheese (crumbled)
- A small handful of fresh mint leaves (roughly torn)
- 30g walnuts (roughly chopped or halved)
- 2 tbsp SUCSEED blend of your choiceÂ
For the dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- ½ tsp Dijon mustard (optional)
- ½ tsp maple syrup or honey (optional)
- Pinch of sea salt and freshly ground black pepper
Method:Â
Prepare the salad
- Rinse and dry the spinach and strawberries
- Slice the strawberries and crumble the feta
- Tear the mint leaves and roughly chop the walnuts
Make the Dressing
- In a small bowl or jar, whisk together the extra virgin olive oil, balsamic vinegar, mustard (if using), maple syrup or honey (if using), and a pinch of salt and pepper
- Taste and adjust seasoning to your liking
Assemble the Salad
- In a large bowl or on two serving plates, layer the spinach, strawberries, mint, feta, and walnuts
- Drizzle with the balsamic dressing
- Finish with a generous sprinkle of your chosen SUCSEED blend for added crunch, fibre, and a subtle nutty flavour
Serve
- Enjoy immediately as a light lunch or colourful side dish.
