Seedy Smashed Avocado & Tomato Sourdough Toast
This colourful toast is perfect for a satisfying brunch or light lunch. Creamy avocado, juicy cherry tomatoes, peppery rocket, and a hearty sprinkle of SUCSEED make it as delicious as it is nutritious.
Seedy Smashed Avocado & Tomato Sourdough Toast recipe
Serves 2
Ingredients:
- 2 slices of sourdough bread
- 1 large ripe avocado
- 6–8 cherry tomatoes (halved – use mixed colours if you like)
- A handful of fresh rocket leaves
- 40g feta cheese (crumbled) or try creamy goat’s cheese, soft sheep’s cheese, or dairy-free coconut feta
- 1 tbsp SUCSEED blend of your choice
- ½ lemon (juice only)
- 1 tsp extra virgin olive oil (plus extra for drizzling)
- Sea salt and black pepper to taste
Method:
Toast the Bread
- Toast the sourdough slices until golden and crisp. Set aside.
Mash the Avocado
- In a bowl, mash the avocado with lemon juice, olive oil, and a pinch of salt and pepper. Taste and adjust as needed.
Assemble the Toast
- Spread the mashed avocado evenly over the toasted sourdough.
- Top with halved cherry tomatoes and crumbled feta (or alternative cheese).
- Scatter fresh rocket leaves over each slice.
- Finish with a generous sprinkle of SUCSEED for added crunch, fibre, and a boost of nutrients.
- Drizzle with a little more olive oil if desired.
