Strawberry, Spinach & Feta Summer Salad

This refreshing summer salad is bursting with flavour and colour. Juicy strawberries, creamy feta, and crunchy walnuts pair beautifully with a drizzle of balsamic dressing and a sprinkle of your favourite SUCSEED blend for added texture and nutritional goodness.

Strawberry, Spinach & Feta Summer Salad recipe

Serves 2

Ingredients: 

  • 100g baby spinach leaves
  • 6–8 ripe strawberries (hulled and sliced)
  • 50g feta cheese (crumbled)
  • A small handful of fresh mint leaves (roughly torn)
  • 30g walnuts (roughly chopped or halved)
  • 2 tbsp SUCSEED blend of your choice 

For the dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp Dijon mustard (optional)
  • ½ tsp maple syrup or honey (optional)
  • Pinch of sea salt and freshly ground black pepper

Method: 

Prepare the salad

  • Rinse and dry the spinach and strawberries
  • Slice the strawberries and crumble the feta
  • Tear the mint leaves and roughly chop the walnuts

Make the Dressing

  • In a small bowl or jar, whisk together the extra virgin olive oil, balsamic vinegar, mustard (if using), maple syrup or honey (if using), and a pinch of salt and pepper
  • Taste and adjust seasoning to your liking

Assemble the Salad

  • In a large bowl or on two serving plates, layer the spinach, strawberries, mint, feta, and walnuts
  • Drizzle with the balsamic dressing
  • Finish with a generous sprinkle of your chosen SUCSEED blend for added crunch, fibre, and a subtle nutty flavour

Serve

  • Enjoy immediately as a light lunch or colourful side dish.
